Yesterday MACS Salon in Kilburn held a Pre-Christmas party for all of our MACS members. The event was a lovely, classy affair, with champagne, mince pies, manicures, and exclusive hair tutorials.

Macs ‘Recipe Of The Week’ from the Paradise restaurant is Roasted Rump of lamb with fennel puree and Baby Beets
250g of rump lamb per person
100g of unsalted butter
100g podded broad beans (or you could uses garden peas)
Bag of pickled beets – around 24 pieces. The picked vac packs are fine.
80ml of olive oil
25ml of sherry vinegar
1tsp coriander seeds
1 clove of crushed garlic
1 sprig of thyme
1 bay leaf
500g fennel sliced
100ml white wine
250ml chicken stock
Salt and pepper
Lamb sauce 100g
Water cress for decoration – optional.
Pre heat the oven to 200C
Heat a frying pan big enough to hold all your lamb; season the meat with salt and pepper. Add 50g of butter to pan and when melted add the lamb and turn to even brown each side of the meat.
Put the lamb to the oven in the frying pan and cook for 8 minutes. Remove from the oven and rest on a room temperature tray for 5 minutes. Do not wash the pan, just put to one side as you will need it again later.
Place the beats, oil, sherry vinegar, crushed coriander seeds, garlic, thyme and bay leaf in a sandwich bag and give them a good rub so they are covered in the oil and herbs. Put to one side.
Heat the remaining butter in a new pan big enough to fit the sliced fennel. When but butter begins to foam, add the fennel, salt and pepper and clamp on a lid to sweat until it turns transparent.
Add the white wine and cook until the wine is reduced to syrup. Add the stock and cook until the fennel is really tender, and then reduce until the stock is completely cooked away. Remove from the heat and puree.
Tip the beet mixture into the fennel pan and gently warm through.
Warm the pan you used to brown the meat and heat the lamb sauce and broad beans until the beans are soft.
To serve, arrange the beets and purée on a warm plate; slice the rested lamb and place on top of the vegetables. Spoon over the hot sauce and beans and serve immediately.

It was such a lovely evening, with all who attended being able to try the amazing Caci treatment for 15 minutes free of charge, and those who booked on the night were able to receive 50% off their first treatment. Many loved it so much that they booked entire courses on the night – speaking for the effectiveness that they were able to see with just a 15 minute demonstration.
In addition to the Caci, guests were treated to drinks including Champagne, Bucks Fizz, Lemon and Lime Water and a special concoction known only as “Frisky Steve”! Love Juice Love Life were on hand to introduce their myriad of tailored juice programmes, with clients being able to taste the juices on the evening.
We are holding a second Caci introductory evening at our Primrose Hill Salon on next Wednesday, the 2nd of October from 7-9pm. Again, a wonderful evening will be laid on for everyone who attends!
